
Nothing could be simpler!
2 tbsp chia seeds
1 cup milk alternative (I use cashew milk)
1/2 tsp vanilla
1/4 tsp cinnamon
Several slices of your favorite vegan bread
1 tbsp of Earthbalance spread
Maple syrup
Stir together the chia, vanilla, milk alternative, and cinnamon and let sit for a few minutes until it begins to thicken. (optional: blend the chia and milk alternative for a smoother consistency)
Soak the bread in the chia mixture until it is soggy enough for you.
Heat a nonstick pan and melt the earth balance. Place the soaked breads in the pan and brown on medium or medium low heat depending on your range. Because there is no egg, it is important to be patient and cook the toasts slowly. When a nice crust starts to appear, flip the bread.
Top with maple syrup and you have yourself a delicious, plant based breakfast!
Note:
If you haven’t got any chia seeds, mixing in some flax meal, mashed banana, or apple sauce all work well to make that egg-like consistency. Heating the milk alternative with about 1/2 tsp ground cinnamon can also thicken it up
