
Sometimes I have a night where all I want is a giant plate of veggies and ranch dressing. The veggies can be simple, just carrots and celery, or gourmet (check out this gorgeous crudite centerpiece by Martha Stewart).
Whatever veggies you fancy, this is a yummy way to dress them.
Vegan Ranch Dressing
1 cup Veganaise (or vegan mayonnaise of your choice)
3 tbsp unsweetened nondairy milk (such as soy or almond)
1 tbsp olive oil
1 tbsp cider vinegar
2 tbsp finely chopped fresh parsley
1 tbsp finely chopped dill
1/4 tsp salt
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp ground pepper
Add all ingredients to a bowl and whisk together. Voila!
Note:
For a thicker dip, use less nondairy milk. To make a thinner salad dressing, use a little more.
