There’s nothing like a fantastic recipe that comes out of necessity or just not having a whole lot in the fridge. Since we are leaving town tomorrow, there’s slim pickings for lunch. But, I’ve always got lettuce or greens on hand. A simple salad with a knockout dressing does the trick. And this dressing was so easy to make! With only has a few ingredients that may already be in your fridge–they’re staples in mine–and about 30 seconds in a blender, you can slather your greens in no time.
Since I am currently on my weight loss and health journey (again), I am avoiding most dairy, grains, nightshades, and starches. Not quite ketogenic, but definitely staying full with healthy fats. To get some spicy flavor, a clove of raw garlic does the trick.
Top it over a salad of mixed spinach and chard, sliced shallots, green onion, pistachios, kalamata olives and herbed chevre like I did, for a vegetarian dish. Or make some chicken or fish tacos with some sliced cabbage and a dollop of creamy cilantro lime dressing for something a little more south of the border.
Recipe
- 1/2 ripe avocado
- A handful of cilantro
- Half of a lime without peel
- 1 garlic clove
- Approximately 2 tbsp white wine vinegar
- Approximately 1/4 cup avocado oil
- Approximately 1/4 cup water
- Salt and pepper to taste
Put all ingredients in a blender or food processor (I used a magic bullet) and blend until creamy. Use less or more water to control thickness, and you can definitely play around with the amount of oil and vinegar as well.
